Meal Plan - Take 2

I thought maybe once a month would be good for this type of thing, whaddaya think? For next week I will do a typical spread: one beef, two chicken, a pork, a vegetarian, a seafood and an "other".

The Plan

Monday: Black Bean & Pork Stirfry

Tuesday: Shrimp Fried Rice

Wednesday: Penne with Chunky Tomato Sauce

Thursday: Creole Poached Chicken Breasts with Rice

Friday: Chicken Fried Steak with biscuits and gravy

Saturday: Homemade Pizzas (on traditional crust)

Sunday: Chicken Parmigiana on Fettucine




The Shopping List

Monday: Black Bean & Pork Stirfry

3 Tbsp black bean sauce (in Asian section of most grocery stores)
1 Tbsp cornstarch
1 Tbsp rice vinegar
Pinch granulated sugar
2 Tbsp vegetable oil
1 lb ground pork
3 green onions
1 Tbsp fresh ginger (about 1 1/2 inch piece)
1 c green beans
Lots of brown basmati rice (need 4 c cold for Tuesday)


Tuesday: Shrimp Fried Rice

3 Tbsp low-sodium soy sauce (Kikkoman does one that is widely available - green label)
2 Tbsp water
2 Tbsp rice vinegar
1 Tbsp sesame oil
1/4 tsp salt
1/4 tsp crushed red chilies
3 Tbsp vegetable oil
1 1/2 lbs shrimp
3 large eggs
2 c finely chopped green onions
1 Tbsp fresh ginger, about 1 1/2 inch piece
1 1/2 c frozen green peas


Wednesday: Mommy's Pasta

2 tsp olive oil
1/2 c onion
1 garlic clove
1 28 oz can diced or whole tomatoes
1/2 c tomato sauce
1/2 tsp salt
1/2 tsp pepper
16 oz whole wheat (or "smart" fibre enhanced) penne noodles
1/2 thinly sliced fresh basil
3 Tbsp grated Parmesan cheese (please, for the love of all that is holy, do NOT get that powdered crap)


Thursday: Creole Chicken with Rice (Or Egg Noodles)


2 tsp olive oil
2 onions
1 green bell pepper
2 celery stalks
1 carrot
1 14oz can of stewed tomatoes (not herbed, yuck)
1/2 c chicken broth
1 1/2 tsp thyme
1/4 tsp salt
1/8 tsp cayenne (or more...)
1 lb chicken breasts (about 3 with tenders, 4 without)


Friday: Chicken Fried Steak with Biscuits and Gravy

2 lbs round steak, or hip minute steak (looks like it has been stretched and thoroughly abused) in 4 pieces
2 1/2 tsp kosher salt
1 tsp cracked black pepper
3 c all purpose flour
3 large eggs
1/4 c vegetable oil
2 c chicken broth
1/2 c homogenized milk
2 tsp thyme
2 tsp baking powder
1/2 tsp baking soda
1/3 c shortening or lard
1 c buttermilk or soured milk
1Tbsp butter


Saturday: Pizza

All purpose flour
Active dry yeast
Olive oil
Pizza toppings, sauce and stuff
Suggestions: pepperoni, broccoli, cauliflower, pineapple, cheese, garlic, onions, jalapenos


Sunday: Chicken Parmigiana

1 lb chicken breasts
1 Tbsp Italian seasoning (or tsp each thyme, rosemary and oregano)
1 c all purpose flour
1 c panko bread crumbs
2 eggs
1 Tbsp butter
1 28 oz can crushed tomatoes
1 large onion
1/4 tsp caraway seeds
Salt
Pepper
3 Tbsp brown sugar
6 oz whole wheat fettuccine noodles
