Going Home Guacamole

I love guacamole. Like I love it so much I would marry it if that wasn't completely illegal. Because I'm already married, silly!

You will need:

3 avocados
1/2 red onion, minced
2 roma or 1 large tomato, chopped fine
2 garlic cloves, crushed (or more-ish)
1 lime
1 jalapeno pepper, chopped
1/2 tsp kosher salt
1/2 tsp cracked black pepper
1 tsp cumin

That's it!

Mince your onions as small as you can and crush your garlic:

They call them red, but they totally look purple to me

Every recipe I've ever read says to seed the tomatoes and the jalapenos but I don't do either. All the good stuff is around the seeds in the tomatoes and jalapeno seeds are what make them spicy. So there.

Go-geous

Avocados can be a little tricky to get out; I cut them in half along their skin, then scoop out the pit with a spoon and along the skin to get all that green goodness.

Looks almost like ice cream

Probably self-explanatory
Roll your room temperature lime to get the most juice out of it. As limes have no seeds, you can squeeze the juice directly on top of the avocado.

Maybe like gross ice cream now
Sprinkle on some kosher salt and coarsely cracked blank pepper and mash like crazy. I like to use a potato masher, but anything would work. I used to use a fork, but it took too long. I like to pile all of the ingredients in the above order, so when you are mashing, you are working against something solid and piecy, so you can really mush that avocado.

Avocadomageddon!
Add in the cumin and mix well. It will taste good right away, and amazing the longer it sits.

Enjoy!!

    1. Thanks, chickie! I made some this day but I couldn't find any of those little crackers at Costco to eat with it! I ended up using some rice crackers, but you know it just wasn't the same.

    1. I don't, because I ride the No-Cilantro Train (no really, check my ticket!) but I bet it would be great if you dig cilantro!
